It’s hard to resist a deliciously indulgent Mac & Cheese with a big crisp salad which is why we love this recipe from chef, Miguel Barclay. His ‘One Pound Meals’ are renowned for their simple ingredients and straightforward recipes. In his latest cookbook ‘Super Easy One Pound Meals’ he takes it one step further by stripping back the cooking process to the fewest steps possible.

Ingredients
100g Macaroni
x1 Onion
Olive Oil
x1 Clove of Garlic
Pinch of chilli Flakes
1tsp Mustard
1tsp Butter
1 tsp Flour
100ml Milk
Mature Cheddar cheese
x1 Tin of crab flakes
Salt + Pepper
Method
Start by pan frying 1/2 a diced onion in a splash of olive oil, then add 1 clove of sliced garlic and continue to fry.
Next add a pinch of chilli flakes, 1 tsp of mustard & 1 tsp of butter. Once melted, stir in 1 tsp of flour and mix. Slowly add 100ml of milk while continuing to stir.
Once a sauce has formed, remove from the heat, add a handful of grated mature cheddar cheese, 1 tbsp of tinned crab flakes, salt, pepper & 100g of pasta cooked al dente.
Transfer to your Falcon Pie Dish and cook in a preheated oven at 190°c for 20 mins.
