We love this beautifully simple recipe from Mimi's Bowl which is ideal for the entire family to enjoy. It's also deliciously creamy and definitely the answer to your Sunday night blues...
Ingredients
2 Sweet Potatoes (300g approx)
400g Fish, I use a combo of salmon & cod
2 tablespoons of herbs, I use parsley & a little dill
1 tablespoon butter
1 tablespoon flour
300ml milk
Method
-Preheat oven to 180C fan
-Peel the sweet potato and boil until tender then mash with a little butter set aside
-Prep fish cut into large cubes, remove all skin and check for any bones (remove)
-Make white sauce, melt butter, add flour and cook for 1 min into a paste, slowly add the milk (room temp) and whisk. Repeat until you have used up all the milk and have a lovely smooth white sauce
-Take the white sauce off the heat add the herbs and fish pieces and gently combine using a spatula
-Pour into an oven proof dish & top with the sweet potato mash (you can add a little butter to this if you want and some black pepper)
-Cook in the oven for 20-30 mins until cooked through
-Cool and serve
This makes 2 (standard) - 4 (small) portions
