HOME-COOKING WITH FALCON

We’ve pulled this delicious spinach pesto pasta from our archives; it’s a great option for the whole family to enjoy while at home during this time. Make use of your prep set and colander when in the kitchen prepping, and serve individual portions using your pie dishes or deep plates.

Carlotta uses robiolini cheese which you can easily swap for ricotta or another soft cheese, and if you don’t have any fresh spinach then switch it up for rosemary, parsley, coriander or basil. Part of the joy of taking time in the kitchen and cooking is adapting according to your own preferences and what you have available to hand.


EASY PESTO PASTA FOR THE WHOLE FAMILY

SERVES: 4


•​​ 1 clove of garlic
•​​ 320 g of dry pasta
•​​ 200 g of fresh spinach
•​​ 30 g of grated Parmesan cheese
•​​ a handful of nuts
•​​ 2 robiolini, or any soft cheese
•​​ olive oil, salt and pepper

Put the garlic in a pan with a little oil. Add the spinach (pre-washed) and cook for a couple of minutes with freshly ground pepper and a pinch of salt.

Remove the clove of garlic and place in a mixer. Add the soft cheese, a handful of nuts and Parmesan cheese. Blend in a mixer with olive oil until you get a creamy consistency.

Meanwhile boil the pasta in salted water. Take a couple of tablespoons of cooking water to stretch the pesto.

Season the pasta and serve with fresh greens and some extra soft cheese crumbled on top.
