EASY VEGAN LENTIL SOUP

• 10 1/2 cups water + vegetable stock cube
• 4 cloves garlic minced
• 1 white onion, diced
• 8 carrots, thinly sliced
• 5 red potatoes, chopped into small cubes
• 2 cups uncooked brown lentils, rinsed and drained
• handful of spinach (optional)
• 1 teaspoon Himalayan salt
• 1 teaspoon ground cumin
• 1 teaspoon turmeric
• 1/2 teaspoon ground black pepper
• 1/4 teaspoon rosemary
• 1/8 teaspoon thyme
Add the minced garlic and diced onions to a large pot with 1/2 cup of water and cook until semi-translucent. 2
Add 10 cups of water, vegetable stock cube, as well as all remaining ingredients (including the lentils) into the pot and bring to boil. 3
Turn down and simmer for 20 minutes (or until potatoes, lentils, and carrots are cooked through).
