FORAGING FOR ELDERFLOWER

You’ll find elderflowers dotted along hedgerows all across the UK and you’ll also find it in London’s parks. Jess Gohl from Burnt Toast, is always sharing creative stories from the countryside, and captured a recent elderflower forage for us.

Grab your secateurs, take a basket or a Falcon vessel with you to carry your find, and follow some of her handy tips and tricks below. Then once home, enjoy brewing your very own elderflower cordial or making a batch of deliciously fragrant sorbet for Summer parties.

- When you pick the flowers don’t forget to give them a little shake to remove any insects before rinsing with cold water and leaving them to dry.

- Avoid collecting elderflowers from busy roads as the flowers will absorb the traffic-fumes.

- Use the flowers as soon as possible once picked to get the best flavour.

- Elderflowers are ready around now. They’re best picked when the buds are freshly open on a warm, dry, sunny day.

- They can be found in most woodlands and hedgerows so make sure to only pick from areas that have a plentiful supply.
